Begin with cured salmon crowned with roe, oysters Venetian, and reggiano with olives and grissini before moving to entrees that celebrate the season: bresaola with figs and goat’s curd, burrata with peach and heirloom tomato, and king prawns with citrus mayonnaise.
Mains take centre stage with duck breast and beetroot blackberry purée, barramundi with golden raisin and pine nuts, and lamb rack brightened with salmoriglio and lemon. Sides of crisp duck fat potatoes and mignonette cos salad keep the table plentiful.
Those looking to elevate the decadence can add half a grilled lobster with Champagne beurre blanc or a Chauvel wagyu rib eye on the bone, carved to share.
